my family and I are staying at a vacation home in orlando. we reserved a house that sleeps 14, but 19 of us are going will the owner come to see if it is 14 of us staying there.

Probably not, but many vacation home owners employ a greeter type person to show you the amenities of the house and that person can probably count to 14.
You can probably get away with it if you are extraordinarily clean, quiet, quick with rental payment and very nice with the landlord. .
Depends is there any amenities included? like pool service, house cleaning? if so any of those people will probably report back to the landlord
Probuly not, but if so you will have to leave. 19 people would make it illegal and out you go.
I hope he got a good deposit.
