I am having a graduation party with around 35 guests but have no clue how much food to serve since we are offering more than one entree. We were thinking of doing Italian Beef sandwiches, baked mostaccioli, and fried chicken along with fruit, salads, and other snacks. How much of the main entrees should I purchase per person. I know generally you estimate 2 servings per person, but how would that work with 3 different choices?

try 2 per person……ultimately it will be more than enough…which means people can get seconds…or take home leftovers
remember its better to have MORE then enough than NOT enough at all
just give each person a viand w/ dessert so it will have two servings in 1 person just add rice also if its okey just add a small amount of other
recipe..i think it is good for them and they will be satisfied to it…
Hi Melissa, Faith is on the right wave length and so are you, so I wouldn’t be stressing.
Have a talk to your Italian or continental Deli, you could have a large platter or two of Antipasto (cold cuts). One tray of sliced cheese, with your provolone picante, your Friuli Cheese, and a couple of other selections, You could also have a tray of Panini with Prosciutto Parma, with one of the selected cheeses but with sun-dried tomato, or egg plant in oil, artichoke hearts.
I know the place I go to bake big slabs of pizza and are fresh daily, I get a half a tomato slab, and half with something else. these slaps are approximately 18″ X 22″ I cut them into 3″ X 3′ squares a quick warm up in the oven, Of course you will have your olives, pickle veggies in vinegar.
Just plan it that your not bringing everything out in one hit, you could start slowly with nibbles like, mini franks, with toothpicks and ketchup poured one the top center. Mini sausage rolls again with ketchup on the side. You have mini spring rolls with sweet chili sauce or plum sauce. that way your catering to everyone.
Then I know your going to have the Maretti, Canoli (I would go with the mini ones here, less wastage and carpet soil-age), and I guess you will have your Torta.

I would get enough of each to serve 1/2- 2/3 of your guests. You don’t want to get 35 servings of each entree. Most likely people will just take a small amount of each including sides and snacks so that will be plenty. I’m sure you will even have left overs.
